Ingredients

For the Pumpkin Cake:
3/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
3 large eggs
1 cup granulated sugar
2/3 cup Libby’s 100% Pure Pumpkin
1 tsp vanilla extract
For the Cream Cheese Filling:
1 (8 oz) package cream cheese, softened
1 cup powdered sugar, sifted
6 tbsp unsalted butter, softened
1 tsp vanilla extract
Extras:
Powdered sugar for dusting
Parchment paper & clean kitchen towel

Instructions

1.Step 1: Preheat & Prepare: First you need to preheat oven to 375°F (190°C) then take a 15x10-inch jelly roll pan with parchment paper. In the last grease and dust the roll pan lightly with flour or use baking spray.
2.Step 2: Make the Pumpkin Batter: Take a bowl, add the following ingredients and whisk them all flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Take another large bowl separately then add eggs and sugar, beat them until these get thick and pale. Now add the pumpkin and vanilla, and mix it until it gets smooth. In the end add in the dry ingredients until the all ingredients get combined.
3.Step 3: Baking: In this stage pour the batter into the prepared pan and spread the batter evenly then bake for 13-15 minutes, or until the top springs back on touching. Tip: Don’t overbake, it gets harden and crack when you roll it.
4.Step 4: Roll While Warm: You need to flip the cake instantly after baking on a clean kitchen towel, then dust it with powdered sugar and remove the parchment paper. Now you have to make rolls of these cakes and need to start from short end, roll the cake up in the towel as you roll jelly roll. Now set these aside to let these get cool and for the perfect roll shape.
5.Step 5: Make the Filling: Now at this stage beat the cream cheese, by adding powdered sugar, butter and vanilla until it gets smooth and fluffy.
6.Step 6: Filling & Re-Roll: Now the cake is cool so, you need to unroll it gently then spread the cream cheese evenly and then carefully make the roll again without the kitchen towel.
7.Step 7: Chill & Serve: In the last stage you need to wrap the roll in a plastic wrap then refrigerate it for 1 hour and before serving just slice it & dust it with powdered sugar.
